Dear God:
Today, I am thankful that fresh organic tomatoes are now reasonably priced.
I nearly fainted when the cost exceeded $3.00 a pound. My favorite pasta sauce requires at least 12 tomatoes (I roast them at 425 degrees with fresh garlic, onions, spices and olive oil, then serve the sauce over linguini). For a time, my husband and I feasted on this simple but rather expensive dish.
For these blessings, I am grateful.
